At an English pub in San Diego, I got perfectly cut potato, fried until golden, and they were served on a sheet of newspaper, the front page of The American Times. The newspaper was fake, of course, as the real thing is illegal for wrapping food in, but it was a nod to the English fish and chips of old that were wrapped in real newspaper. I doused my fries with lots of malt vinegar, and to gild the lily they came with a Japanese curry dipping sauce (yes, I'm sure it was the Japanese stuff). As I dipped and ate, there was sourness from the vinegar and richness and mild spice from the curry sauce. The chips weren't particularly crispy, but the potato flavor was on point, and that's what I want; skinny fries can't deliver that. When I'd eaten most of this pub grub, I could read the headline on the fake newspaper: “The Berlin Wall Falls”.
