Bigos is cooked cabbage that melts in your mouth, and it's flavored with pork products and dried fruits. The Polish couple who make this dish, across the street from a beach in Nicaragua, take their food seriously. They cook this dish, and then they warm it up and cool it down four times; otherwise, they said, it would simply be grandma's bigos, not the real thing. The pork included rib and bacon, and the fruit included dried plum. They also used a type of dried mushroom that they imported from Poland. This is basically an enhanced cabbage dish, but it's very enhanced. It was served with fried potato slices with skin on that also melted in your mouth. This was a juicy dish with pork flavor that came through nicely.
